Children's Cooperative Daycare Recipes

These are recipes that have been tested and well-liked by the kids at the Daycare. They are good foods to use for Foodweek. Feel free to share them with anyone. Also feel free to submit new recipes at any time to Nancy or Ian.

Pumpkin Muffins:

  • 2 cups canned pumpkin
  • 2 1/2 cups self-rising flour
  • 1 3/4 cup sugar
  • 3 eggs (or equivalent amount egg substitute)
  • 1 1/3 cup oil (or applesauce)
  • 1/4 cup water
  • 1 tbsp vanilla
  • 1 tbsp cinnamon

Mix all ingredients together quickly -- do not overmix -- just until blended. Bake 22-25 minutes at 350 degrees F.

Zucchini Bread:

  • 3 eggs (or equivalent amount egg substitute)
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 1 tsp vanilla
  • 2 cups grated zucchini
  • 2 cups flour
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder

Beat eggs then beat in all remaining ingredients. Bake at 350 degrees F for 1 hour.
